Baked Chicken Quarters: Legs and Thighs Plus a WHOLE LOT MORE , Cooking - LIVE - Today we cook a cook Chicken quarters cut into legs and thighs, we make and ferment celery juice and we make some sauerkraut - all in less than 2 hours.
Chicken :
1 stick of Kerrygold butter (softened)
3 tablespoons dried basil
1 tablespoon Everything Seasoning
The zest of 2 lemons

Stir all of the above together and rub all over the chicken. Make sure to get it rubbed under the skin as well.

Fermented Celery Juice:
1 head of celery chopped
3 inches of ginger
The Juice of 2 lemons
1/2 cup Kefir water - add this AFTER Blending or Juicing

Use your juicer - or -
Blend in your high powered blender until it is the consistency of a smoothie.
Strain through a nut milk bag
Add Kefir water.

Sauerkraut:
1 small head of organic cabbage
19 grams of salt

Slice your cabbage thin.
Place it in a big bowl and
Salt and mix and let it stand with a weight on it
